People have made use of herbs in cooking for centuries.  Cooking herbs like parsley, thyme, mint, garlic, and chives are among popular herbs to cook with.  There are numerous recipes that call for cooking herbs: vinegars, oils, salads, appetizers, entrees, and desserts.

There are so many herbs to cook with.  Listed below are just a few.

Garlic

The garlic bulb is used to flavor all sorts of cooking.  It usually added to olive oil to flavor dishes.  It is a member of the onion family, and varieties vary in flavor considerably.

Chives

You usually see chives sprinkled on salads, soups, meats, and on sour cream with a baked potato.  Chives are also a member of the onion family.  They are used in egg and cheese dishes as a garnish.  Cooking chives destroys their flavor, so they are best added to dishes at the end of the cooking process.

Dill

Dill leaves are used in salads, fish dishes, and sauces.  They are also used to flavor pickles.  The seed oil is used in making gripe water also.  Dill keeps its flavor even when frozen.

Dill Salad Dressing

Lemon Juice
Salad Oil
Dijon Mustard
Minced Fresh Dill
Combine the juice and the oil by slowly whisking.  Add the mustard and the dill and refrigerate.  This dressing can be used on sliced tomatoes or on a salad.  Try it with fish or chicken also!

Sage Flavored Rice

Beef or Chicken Bouillon
Rice
Butter
Chopped Fresh Sage
Parmesan Cheese
Boil the bouillon, add rice, lower heat and cook 15-20 minutes covered.  Melt butter in a separate pan and add sage.  Stir the melted sage butter into the rice.  When serving, sprinkle the rice with chicken or veal.
